How to Taste Wine

Panoramic of Michael's Wine Cellar Store Michael's Scoring System: My system for rating groups of wines at a tasting or at home is simple: If I like it a lot, I give it ++; if I like it, I give it +; if I don't like it, I give it –. Suggestion: Save your receipts when you shop. Put them on a bulletin board or stick them to your fridge with a magnet.Mark each wine as I have suggested. Pretty soon your wine merchant will be able to help you build a “tree" from the things you like! Peer Pressure: Remember, when other tasters voice their opinions, expertise should never, ever overrule your individual preference! How to taste: The idea behind wine tasting is as simple as this: slow down, relax and take the time to think about what you're drinking. 1. First, examine the color. Is it clear or hazy, transparent or opaque? Take a deep sniff. Swirl the wine to allow aromas to escape as the wine "opens up" in the glass. Does it smell like fruit? Flowers? Road tar or sweat socks? 2. Take a drink. Take two. Swish it around in your mouth (almost like you would with mouthwash!), sensing not only its taste but also its texture and weight, often described as "mouth feel". As the moment of tasting becomes swallowing, let the memory of the wine on your palate speak to your own taste. The aftertaste, or “finish," of a wine can be brief or lengthy, extraordinary or off-putting, but is usually a major influence in our ultimate enjoyment of a favorite wine. 3. Don't judge a wine solely on its looks; enjoy it with all of your senses, even sound! Listen as all of your tasting senses tell you what you like (or dislike) about each wine. Never underestimate the importance of smell. We actually smell most of the things that we think we taste. Our taste buds can discern only four flavors - sweet, sour, salt and bitter - while the nose is capable of discerning thousands of subtle variations of scents distilling sensations even from the recesses of memory. Admission includes a selection of hors d'oeuvres and tastes of seven Adelsheim wines: Pinot Gris, Adelsheim, Willamette Valley, OR, 2011 Crisp, bright flavors have always been the hallmark of Adelsheim Pinot gris. In this 2012, you’ll find hints of papaya, apples and pears. It pulls off the difficult feat of providing a gentle creaminess that lends a rich, mouthfilling texture and long finish, yet still impressing as a wine that’s crisp and clean. Though a perfect summer beverage on its own, this Rosé will pair with all manner of that season’s meals, from bouillabaisse and grilled shrimp, to goat cheese, ham and poultry entrees. Pinot Noir, Adelsheim, Willamette Valley, OR, 2011 With its broad array of origins and clones, this wine displays red aromas (candied cherry, pomegranate and raspberry) on the nose and the palate. In addition, one finds a light touch of brown spices (nutmeg, cinnamon, all-spice). True to our house style, it is elegantly textured with seamlessly integrated, silky, polished tannins. Pair it with salmon or ahi, veal or pork, poultry (think duck) or beef, or hearty vegetarian entrees. Pinot Noir "Elizabeth's Reserve", Adelsheim, Willamette Valley, OR, 2010 The name “Elizabeth’s Reserve” was first used in 1986 to designate the blend of our best barrels of Pinot noir. From 1987 until 1999 it designated a single vineyard wine, but in 2000 returned to a “best of winery” reserve - the best barrels from our best lots. Most of the fruit for this wine (65%) comes from five of our estate vineyards located on south-facing slopes of the Chehalem Mountains and Ribbon Ridge. With many wonderful lots representing different soil types, clones, site climates, fermenter sizes, and barrel characteristics, winemaker Dave Paige pulls to- gether those that best create a reserve level wine, one that truly reflects the vintage and character of our corner of the Willamette Valley. This wine is both elegant and intense, offering layered aromas of red raspberries, fresh Oregon strawberries, brown spice and cedar. Its aromas are reflected on a pal- ate that speaks of purity and elegance, and is exception- ally balanced with silky tannins and a persistent finish. This wine will pair beautifully with the Pinot noir classics - lamb, duck, grilled salmon, and aged cheeses. Pinot Noir "Deglace", Adelsheim, Willamette Valley, OR, 2011, 375ml Even with this sweet wine, we stay true to our winery philosophy that a wine’s highest use is in pairing with meals. That means retaining enough of the grapes’ natural acidity to ensure that the wine never becomes too cloying. Our Deglacé has amazing strawberry shortcake, citrus blossom, and nectarine aromas that meld with the viscous yet firm texture on the palate. It should prove to be a perfect match with red berry tarts, pumpkin cheesecake, and a wide range of other desserts. Rustenberg Wine Dinner If you've been following our travels to some amazing wineries, you may already know that my wife and I just had the great privilege of leading dozens of Gulf Coast Connoisseur Club members through South Africa’s winelands in partnership with Ryan Hilton of Admiral Travel International. Throughout six weeks of travels this summer, we were fortunate to meet, and drink, with some of South Africa’s top winemakers at historic wine farms and beautiful estates. In particular, I enjoyed visiting with Simon Barlow, proprietor of the Rustenberg Wine Estate. (His family is considered almost royalty in South Africa!) In fact, Simon and his wife Roseann were surprise guests who joined the GCCC group on safari for a unique bush dinner. Gracious hosts, the Barlows even invited our group to their private home later that week as we traveled through the Cape winelands. Now, Simon will be traveling to Sarasota to host a special wine dinner this month! Simon Barlow will host a five-course wine dinner designed to complement eight South African wines at 7 p.m. on Tuesday, September 24 in one of my favorite spaces, Michael’s Wine Cellar.

Tasting with David Adelsheim

Adelsheim Vineyard Wines David Adelsheim, president of the Willamette Valley's Adelsheim Vineyard, will host a special wine tasting at 6 p.m. on Monday, Sept. 23 at Michael’s Wine Cellar, 1283 South Tamiami Trail, Midtown Plaza in Sarasota. Spice Route’s Swartland Terroir-Style Wines

Spice Route Winery In 1997 Charles Back, having established Fairview in Paarl as a successful and popular wine estate, bought a farm called Klein Amoskuil near Malmesbury in the Swartland region northwest of Paarl, then better known for its wheat rather than its wine. It was the next step in applying his philosophy to ‘go where the terroir is’. Says Charles: “I wanted to break away from the estate concept, which constrains a property owner, not necessarily blessed with the best viticultural land, from exploring the wine styles and levels of quality he aspires to. For me the quality of the wine became more important than the name of its source.” This Malmesbury-based farm is now home to Spice Route’s Swartland terroir-styled wines. The Spice Route Winery has found its signature wine style in the warm rolling hills along the Cape West Coast. Southern Right Wines for Whale Conservation

Southern Right Wines Southern Right is a small Pinotage and Sauvignon Blanc specialist located on a strikingly beautiful property in the cool, maritime, Hemelen-Aarde Valley appellation. Founded by Anthony Hamilton Russell in 1994, Southern Right's aim was to produce a serious, age-worthy Pinotage combining a distinct South African fruit and flavour expression with classic styling and refinement. It is Anthony's belief that as an early ripening grape, Pinotage is best suited to cooler areas. It was also his conviction that the stony, high clay content, shale-derived soils on the sites he chose for the vineyards, were best suited to creating the more classic style he was aiming for. Rigorous yield management and extreme care to ensure harvesting at full physiological ripeness, combine with the terroir to re-define South Africa's red grape variety. The Sauvignon Blanc remains a local and international best seller with its classic, tight minerality complementing the prominent varietal fruit. It has been rated best South African Sauvignon Blanc in the Wall Street Journal and was the only Sauvignon Blanc to win a Gold Medal at the Classic Wine Trophy awards in 2009. The wines are named after the rare Southern Right whales, which frequent the cool South Atlantic Walker Bay, 3 kilometres from the vineyards. With each bottle sold, Southern Right makes a contribution to Southern Right whale conservation.
