If you order the Roasted Chicken Lemonato, consider this wine pairing...

Chardonnay, Ancien, Carneros, CA, 2016
About the wine: Ancien Chardonnay owes its style, depth, and structure to intensely flavored, low yielding, heirloom clones growing in two Carneros vineyards: on the Napa side, the Toyon Farm and on the Sonoma side, the Sangiacomo Vella Ranch. They hand-selected the cuttings themselves, from older vineyards in the Carneros area. These cuttings are reputed to have origins tracing to Paul Masson who imported them from Burgundy in the early 1940s, from Louis Latour's renowned Corton Charlemagne vineyard. These selections are often referred to as “Old Wente” or “Robert Young,” denoting the sourced mother blocks in the 1960s.
Tasting notes: This floral white is rich and textured, with lovely layers of integrated oak, Meyer lemon, and melon. The balanced palate is accented by anise and a lasting note of wet stone.
If you order the Chianti-Braised Short Rib, consider this wine pairing...
Chianti, Poggiotondo, Tuscany, IT, 2017
About this wine: Situated in the heart of Tuscany between Florence and Pisa, Poggiotondo
wines are a pure expression of the Chianti region. The family, following the principles of organic agriculture and farming, grow their vineyards in a natural and balanced environment.
Tasting notes: Dark garnet in color. Red cherries with hints of dried oregano on the nose and palate with a fresh, vibrant finish.
If you order the Pan-Seared Faroe Island Salmon, consider this wine pairing...
About this wine: Located in the southernmost part of Burgundy, the Mâconnais growing region is not dissimilar to the famed Côte de Beaune to its north. Mâcon’s epicenter, Mont de Pouilly, rises gently with alkaline clay covering a stark limestone base, a nirvana for the Chardonnay vines that lie smugly along the river Saône. With favorable southeast exposures and agreeable weather, the potential for generous, layered whites offering some of the best value in Burgundy, and possibly the world, is unlimited.
Tasting notes: Deep yellow, scents of apricots and ripe apples, crisp white fruit on the palate, with lots of Asian pear and apple hints, bright and forward, delicious, refreshing, and balanced.
If you order the Wild Mushroom Risotto, consider this wine pairing...
About this wine: Clos Floridene is a 31 hectares estate mostly located on the calcareous plateau of Pujols sur Ciron, in the Graves appellation. Since 1982 Denis and Florence Dubourdieu have supervised the replanting of the vineyard. Its name evokes the first names of its founders: Denis and Florence Dubourdieu. Clos Floridene is a small enclosed parcel planted with 2 hectares of old white vines, a wine-grower dwelling, and an old cellar.
Tasting notes: Dark purple with a bit of light violet at the very edges. A very sweet floral bouquet with a bit of blueberry and the faintest hint of char in the nose, which is entrancing. Slightly sweet on the entrance. Chalky red and blackberries and strong plum on the finish.
