The two-course lunch offering features a choice of entrée and dessert for $15 per person and is available Monday through Friday, 11:30 a.m. to 2 p.m.

CHARDONNAY (Courtesy of Wine-Searcher.com)  Chardonnay is the world’s most famous white-wine grape and also one of the most widely planted. Although the most highly regarded expressions of the variety are those from Burgundy and California, many high-quality examples are made in Italy, Australia, New Zealand and parts of South America. Describing the flavors of Chardonnay is no easy task. While many Chardonnay wines have high aromatic complexity, this is usually due to winemaking techniques (particularly the use of oak) rather than the variety's intrinsic qualities. Malolactic fermentation gives distinctive buttery aromas. Fermentation and/or maturation in oak barrels contributes notes of vanilla, smoke and hints of sweet spices such as clove and cinnamon. Extended lees contact while in barrel imparts biscuity, doughy flavors. Because of this high level of winemaker involvement, Chardonnay has become known as the "winemaker's wine." Chardonnay Vines: The variety itself (although often said to be relatively flavor-neutral) is responsible for most of the fruity flavors found in Chardonnay wines. These range from the tropical (banana, melon, pineapple and guava) to stonefruits (peach, nectarine and apricot), citrus and apples. Climate plays a major role in dictating which fruit flavors a Chardonnay will have. Broadly speaking, warm regions such as California, Chile and much of Australia tend to give more tropical styles. Temperate zones such as southern Burgundy or northern New Zealand create wines marked out by stonefruit notes. The very coolest Chardonnay vineyards (those in Chablis, Champagne and Germany) lean towards green-apple aromas. Mineral descriptors such as chalk, wet stones and crushed seashells also find their way into Chardonnay tasting notes. These are sometimes attributed to the soils in the vineyard, although the relationship between soil and wine flavor has become widely exaggerated. The most famously minerally Chardonnay wines are those of Chablis, one of the very few wine regions to focus on a largely unoaked style of Chardonnay. Although most famous for its still, dry wines, Chardonnay is used to produce an impressively diverse range of wine styles. The variety is put to use in sparkling wines all over the world (most famously Champagne), when it is usually paired with Pinot Noir. Canada even produces sweet Chardonnay ice wines. Chardonnay is particularly popular with wine producers, not least because it has a reliable market of keen consumers. The variety produces relatively high yields, will grow in a broad spectrum of climates and can be made into wine of acceptable quality with relative ease. In poor vintages, deficiencies can be covered up with oak flavors, reducing the financial impact of a bad harvest. In the vineyard, Chardonnay presents a few viticultural challenges, but none that can't be solved with age-old techniques or a little help from technology. (Were this not the case, the variety would certainly not be as successful as it is.) In very warm climates, Chardonnay grapes tend to lose their natural acidity, resulting in flat, overblown wines. This can be partially corrected with a simple addition of acid, or by harvesting early and compensating for lack of flavor by using oak and malolactic fermentation. Vignerons in cooler climates have a quite different problem with the variety, as the vines bud and flower early in the season, making them susceptible to spring frosts. Vignerons in Burgundy (particularly in Chablis) have traditionally mitigated this with braziers between the vine rows. These are not just for warmth – they also create frost-preventing air currents.

Typically, we gather guests around one long, candlelit table for these special wine dinner affairs. The single table, for just 38 guests, is an impressive sight and allows for the visiting winemaker to truly host the event at "his" table." We had an overwhelming response to Chateau Montelena enthusiasts anxious to attend this special event featuring the classic, ageworthy wines from this historic Napa winery... For good reason! "In 1976 Chateau Montelena helped put California at the forefront of the wine world. That year a who's-who of the French wine and food establishment gathered for a grand tasting at the Inter-Continental Hotel in Paris. Four white Burgundies were tasted against six California Chardonnays. When the scores were tallied, the French Judges were convinced that the top-ranking white wine was one of their own. In fact, it was Chateau Montelena's 1973 Chardonnay, rated above all other wines. The results proved that Chateau Montelena could produce some of the world's finest wines, and that California's wine industry had come of age." On this particular evening earlier in the week, guests were delighted with an added surprise host at our wine dinner event! A panel of 16 area-based wine experts tasted nearly 300 wine entries from Forks & Corks’ participating wineries from around the world. The judges, each of whom sampled about 60 wines apiece, spent nearly eight hours evaluating the wines before coming up with the top winners. The two "Best of Show" wines selected are the 2012 Presqu'ile Winery Chardonnay from Santa Maria Valley, CA; and the 2007 Zenato Cresasso from Veneto, Italy.

Porter Wine Dinner

Porter Vineyards Tom and Beverly Porter of Porter Family Vineyards from the Coombsville region of Napa Valley will host an extravagantfive-course wine dinner, showcasing inventive dishes designed for their celebrated wine portfolio. Last year's Porter wine dinner was a sell-out, with guests placing record orders of these California wines. UPDATE: The Porter Family Vineyards Wine Dinner has sold out. Please call 941-366-0007, ext. 229 to be placed on the waiting list.  $95, plus tax and gratuity Tom Porter grew up in Adrian, Michigan with an intense interest in science and technology. “My father was a chemist, affording me access to the chemicals necessary to build rockets in the basement. My journey to electronics occurred after a few explosions on the launch pad and my father rather forcefully suggesting that perhaps I should consider applying my energies to some other science projects.” Following graduation from school, Tom enrolled at Michigan Tech in the electrical engineering program. In June 1968, one week after graduation, he drove to Rochester, Minnesota to begin what turned out to be a 27 year stay at IBM.  At IBM, Tom had the opportunity as an engineer to work on a broad spectrum of exciting projects including the development of IBM’s first digital modem and the automated ticketing system for the Bay Area Rapid Transit System (Bart). His proudest accomplishment was a patent for the mechanics inside the 3.5 inch floppy disk that ultimately became the industry standard and shipped in every PC for nearly 15 years. In 1973, Tom married his soul-mate, Beverly and they now have three children and four grandchildren. In 1978, IBM offered Tom an engineering management position that started a new career in technology management, spanning 25 years and three companies. Most recently he was CTO and Executive Vice President of Product Development at Seagate Technology responsible for Technology Strategy, Technology Development, Product Development, and Advanced Research. In 2005, Bev and Tom purchased a 20 acre vineyard in Napa, California and constructed a 17,000 square foot underground cave to house the winery. “This resulted in a most wonderful unintended consequence as their daughter (Heather), her husband (Steven), and their son (Tim) decided to move to Napa and join us in the development of Porter Family Vineyards.” Bev and Tom have established a family foundation that supports children in need. Over the past 10 years the foundation has helped build a children’s home in Tanzania, Africa, supported a teen group in Sarasota and aided troubled kids in Boston. Each winter when the grape harvest is done, the new wines are resting in barrels, and the cold rains come to California, Tom and Bev head for Longboat Key for “The Season” – a fortunate opportunity for guests of this upcoming wine dinner at Michael’s Wine Cellar! Michael’s wine dinners are held monthly with unique themes for each event. Each wine dinner features eight wines paired with an extravagant five course menu.
